- Time Required: 30 Minutes
- Ingredients: For Two Persons
- 200g Penne Pasta
- 150g Cherry Tomatoes
- 30g Capers
- Half a Bunch of Parsley
- 60g Mozzarella
- 2 Tablespoons Balsamic vinegar
- 3 Tablespoons Olive Oil
- 1 Teaspoon of Dijon Mustard
- Seasonal Herbs- Basil, Rosemary… Add to Taste.
- Salt and Pepper – Add to Taste
- 200g Penne Pasta
Preparation
Add the Mustard to a large mixing bowl, then add the Balsamic Vinegar and Olive Oil. Mix together, into a smooth dressing. Add the assorted herbs and season with salt and pepper. Mix together well.
At this stage, put the dressing to one side and cook the pasta. Once cooked drain the pasta, and wash with cold water to prevent sticking.
Slice the tomatoes into fairly thick slices, and roughly chop the parsley. Chop the Mozzarella into chunks or cubes as desired.
Add the pasta to the dressing, and mix until the pasta is covered. Then add the sliced tomatoes, parsley and mozzarella- and add capers to taste. Not everybody likes capers, so you can leave these out if desired.
That’s it, you are ready to serve! Remember you can always add more ingredients if you intend to serve more than two people. This is a nice easy dish, that can be prepared in a flash. It makes a vibrant looking and tasting addition to any meal.
